As a qualified nutritionist, Julie’s kitchen philosophy is that food should be made from real, whole foods. However, as a busy working mum of two, she also recognises the day-to-day difficulties behind the seemingly simple task of just getting healthy food on the table for the family at the right time. Especially at the end of the day when the typical circus begins of juggling kids’ evening routines with dinner prep, serving, eating and cleaning up.

Her book Healthy Easy Dinners for Busy Mums has been written with this in mind, and the recipes in it are satisfying, delicious, nutritious evening meals that your whole family can enjoy.

What’s inside it?

You’ll find 14 dinner recipes that are firm family favourites in Julie’s household. All use ingredients you’re likely to find in a typical Kiwi kitchen (i.e. you won’t have to go out and buy everything on the recipe lists just to create these meals).

What I love about these meals is that they may be simple to create, but they are still designed to impress and are full of flavour. Enough flavour to disguise the veges incorporated into the meals or at least make them seem more exciting, which could potentially be a great time and frustration-saver if you have kids who like to start a battle when it comes to eating their vegetables!

Moroccan Chicken Pie, Wholesome Hungarian Goulash, and Salmon Quiche are a few of the dinners you’ll learn how to create. There are some great tips on preparation, and a number of the recipes are gluten-free and/or dairy-free.

Also included are shopping lists for all the ingredients you’ll need, splitting the recipes out over two weeks.
